This Festive Drink – How to Make It

We present an easy take on a beverage found on our latest drinks list. This is a batch pre-mixed that is bursting with the flavours of the holiday season, rendering it ideal for a holiday party. Save the extra citrus syrup you can use for morning drinks, sweets, or to mix another batch of the drink.

The Bikini Cocktail

Serves 10 guests

For the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Premix (produces 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Citrus Syrup: Place the listed components in a pan, heat until it reaches a light boil, agitating until the sugar dissolves. Next, remove from the stove allowing it to cool down completely. Decant into a sealable bottle, cap it keeping it chilled, it will last for up to a month.

Preparing the Cocktail Base: Combine the specified spirits and syrup into a large bottle, leave to sit for an hour, then strain preferably using cheesecloth, to ensure it's perfectly clear.

For serving: Measure 85ml of the cocktail base into a stirring glass containing ice, gently stirring carefully for a minute until cold. Strain into an frosted cocktail glass or equivalent, decorate with some cranberries and complete it with a brief mist with the mandarin essence over the drink.
